Creamy Corn Soup
makes 12 servings
Ideal slow for a slow cooker
1 lb. bacon
4 cups diced potato
2 cups chopped onion
2 cups sour cream
2 1/2 cups milk
2 10 3/4 oz. cans cream of chicken soup
2 15 1/4 oz. cans whole-kernel corn, undrained
Thinly sliced green onions
1. Cook bacon in large skillet until crisp. Drain well, crumble, and set aside.
2. Add potato, onion and small amount of water to skillet. Cook 15 min. or until tender, stirring occasionally. Drain, transfer potato, onion, and all but 1/2 cup crumbled bacon to slow cooker. (refrigerate reserved bacon)
3. Stir in sour cream, milk,soup, and corn. Cover and cook on low 2 hrs. Sprinkle green onions and reserved bacon on each serving.
